Peach or Apricot Jam

Although I’m highly suspicious of the calorie count.

Just a little back-of-the-envelope calorie counting: three cups of sliced apricots has 237 calories. Assuming we added nothing else, if each tablespoon had 3 calories, this recipe would need to make 79 Tablespoons of jam. That’s one tablespoon shy of five cups.

Unless you’re David Copperfield, I don’t think you’re going to put 3 cups and 5 tablespoons in a pot, boil it, and pour off 4.9 cups.

Peach or Apricot Jam

3 c. diced fresh peach or apricot
1-1/2 t. fresh lemon juice
1-1/2 t. unflavored gelatin
2 T. apple juice concentrate

Place peach or apricot in saucepan. Cook on low heat without water, 10 minutes.

Remove lid and bring juice to boiling point. Boil 1 minute and remove.

Soften gelatin in lemon juice 5 minutes. Pour some hot juice from fruit into gelatin mixture. and stir until gelatin dissolved. Add 2 T. apple juice.
