Lemon Pie

Made from eggs, lemons, and cornstarch.

From the box of A.D. from Lutz, Florida, by way of Pennsylvania in the 1940s, and originating in Ohio in the 1920s.

Lemon Pie

3/4 c. sugar
3/4 c. boiling water
3 Tbsp. lemon juice
3 Tbsp. cornstarch
2 eggs
Grated rind of 1 lemon
1 tsp. butter

Mix cornstarch, sugar, water. Cook two minutes. Add eggs, butter, rind, and juice of lemon.

Bake in one crust.
