Opal’s Carrot and Peanut Salad
1 cup peanuts
2 cups diced carrots
salt
mayonnaise
- Wash and scrape young carrots and put through food chopper.
- Shell peanuts and put through food chopper.
- Mix with salad dressing and salt and serve.
I first read this as “OPRAH’s Carrot and Peanut Salad.” So I was a little disappointed. But then, not. Because, what a weird recipe.
That’d really be, “Oprah’s Carrot and Peanut SALAAAAAAD!”
