A cranberry and apple crisp with nuts.
A family recipe provided by Jennifer Kiel of Washington, DC, from her mother-in-law’s collection, started in Kent, Ohio.
Cranberry Trenton Dessert
Good either warm or cold
3 cups chopped cranberries
3 cups chopped tart apples
1 Tbsp. cornstarch
1/3 cup light brown sugar
3/4 cup sugar
1 tsp. salt
1 tsp. vanilla
1 cup oatmeal
1/2 cup light brown sugar
1/3 cup sifted flour
2 Tbsp. cornflakes
1/4 cup butter
1/2 cup chopped nuts
Combine cranberries, apples, cornstarch, 1/3 cup brown sugar, granulated sugar, 1/2 tsp. of the salt and vanilla. Pour into a buttered baking dish 7 x 11 x 2″.
Mix together the oatmeal, the 1/2 cup brown sugar, flour, cornflakes and the remaining 1/2 tsp. salt. Cut in butter until mixture is crumbly; stir in nuts. Sprinkle evenly over the top of the cranberry mixture. Bake at 350 degrees 35 to 40 minutes. Top with whipped cream if you wish. Makes 10 servings.
