Soda Cracker Pie

Well, in defense of the author of the card, soda cracker pies are unusual. Essentially, it’s a meringue with dates, nuts and soda crackers.

From a box sold in Canby, Oregon.

Unusual Dessert

12 dates chopped fine
Roll 18 white crackers
1/4 [originally 1/2, it looks like] tsp. baking powder
1 c. sugar
1/2 c. nut meats (broken)
3 egg whites

Add dates to crackers so dates are coated. Add sugar, baking powder, nuts.

Fold into egg whites. Add 1/2 tsp. vanilla. Put in greased pan.

Bake 350 deg. 25 minutes.

Serve with whipped cream or ice cream.

10″ x 6″ x 1-1/2″ pan.

Soda cracker pie method (provided by Yesterdish)

You might get better results doing it this way:

  1. Toss the dates in the cracker crumbs, nuts, and baking powder.
  2. Line the pan with parchment.
  3. Beat the egg whites to stiff peaks, incorporating the sugar and vanilla as you do.
  4. Fold the date mixture into the egg whites, pour into the pan, and bake as directed.
