Pepper Relish

The key to any good sub sandwich.

From a box sold in Canby, Oregon.

Pepper Relish

12 green peppers
12 red peppers
3 onions
2 Tbsp. salt
1 qt. vinegar
2 c. sugar

Chop peppers and onions. Cover with boiling water; let stand 10 minutes. Drain.

Cover with hot water and let come to boil. Add salt, sugar, vinegar; boil 15 minutes. Pack in jars to seal.
