Esther’s Cool Treat

Sort of a riff on ice cream bars and layer bars?

From a box sold in Columbiaville, Michigan.

Esther’s Cool Treat (as written on the card)

1 1/2 c. crushed peanut butter crunch cereal
1/3 c. brown sugar
1/3 c. oleo (melted)

Combine sugar, butter + cereal.

Press 1/2 of mixture in 8″ greased pan. Chill 1 hr. Save rest of crumbs for topping.

Soften ice cream + spread over crust. Freeze till firm.

Choc. layer

1/2 c. oleo
1 c. powdered sugar
2 egg yolks
1 oz. chocolate (melted and cooled)
2 egg whites

Beat butter + pow. sug. till creamy. Blend in egg yolk + choc.
Fold in stiffly beaten egg whites. Spread evenly over ice crm.

Sprinkle w/ remaining crumbs. Freeze overnight.
