Praline Yam Casserole

Yam will freeze. So that’s good.

From a box sold in San Antonio, Texas.

Praline Yam Casserole

4 medium yams or 2 1 pound, 4 oz. cans
2 eggs, beaten
1/2 cup [dark, scribbled out] brown sugar
1/3 c. melted butter
1 tsp. salt
1/2 c. pecan halves

Peel and quarter yams. Boil until tender. Drain and mash.

Combine yams with eggs, 1/4 cup brown sugar, 2 t. butter and salt. Place mixture in 1 qt. casserole.

Arrange pecan halves in pattern over the top. Sprinkle with remaining sugar and drizzle with remaining butter. Bake uncovered in 375 deg. for 20 minutes. Serve with orange juice.

Yam will freeze.
