Peanut Brittle

Peanut Brittle

Cook together until it forms a rather hard ball in water:

  • 1 c. white syrup
  • 2 c. sugar
  • 1/2 c. water

Then add 2-1/2 c. raw peanuts and stir constantly until it starts to change color to a light tan–add a pinch of salt and a chunk of butter. When it is melted remove from fire and add a level teaspoon soda. Stir lightly and pour into buttered pans.

1 tsp. vanilla
Add peanuts 240 deg.
Cook to 320 deg.
