Generally, it’s best to cook with canned pumpkin unless you cook a lot of pumpkins. Canned pumpkin has a normalized water content that works reliably in recipes. Fresh pumpkins will have wildly different water content; it’s a bit like potatoes when you’re making gnocchi.
