Calcium hydroxide, a strongly alkaline mineral once used in pickling to increase the crispness of the product. Calcium deposits itself into the pectin of the pickled vegetable. However, it is no longer recommended for home use because, if improperly washed away, it counteracts the acidity of brine, making the product hospitable to bacteria.
