Jelly-Filled Thumbprints

Something sweet for Hanukkah, maybe?

Jelly-Filled Thumbprints

3/4 c. oleo
1 c. firmly packed brown sugar
1 t. vanilla
1/2 c. flaked or shredded coconut
2 c. quick oatmeal, uncooked
Variety of jellies or preserves.

Beat oleo until creamy. Add sugar and vanilla, beating until smooth. Stir in coconut and oats, mixing until blended (dough will be quite stiff).

Chill dough until easy to handle, about 2 hours. Shape dough to form ball 1 inch in diameter. Press center of each with thumb to make an indentation. Fill with jelly or preserves.

Store in refrigerator. Makes 4 dozen cookies.
