It’s a Snap Cheesecake
1 envelope Knox unflavored gelatin
1/2 cup sugar
2/3 cup boiling water
2 packages (8 oz. each) cream cheese, softened
1 teaspoon vanilla
1 ready-made graham cracker pie crust
1 can cherry, blueberry, or your choice pie filling
In a small bowl, mix gelatin and sugar. Add water and stir until dissolves. In large mixing bowl beat cream cheese and vanilla with mixer until fluffy. Gradually beat in gelatin mixture until smooth. Pour into crust. Chill until firm, at least 3 hours. Top with pie filling.
