Lemon Sugar Cookies

My mother once accidentally made lemon peanut butter cookies.

Yesterdish suggestion: Don’t ever make lemon peanut butter cookies.

Make these instead.

From a box sold in Canby, Oregon.

Lemon Sugar Cookies

1/2 c. butter
1 c. sugar
1 whole egg
1 egg yolk
1-1/2 cup flour
1 teaspoon baking powder
1/2 tsp. salt
1/4 c. lemon juice
grated rind of one lemon

Mix butter, sugar, egg [yolk]– then add eggs. Add sifted dry ingredients alternately with lemon juice and rind.

Drop on sheet. Bake 10 min. Sprinkle with sugar while hot. Oven 350.

  1. Lemon peanut butter = skunk cookies… You need to know this. I had a basic batter and was adding various flavorings. I accidentally added the peanut butter to the already lemon flavored batter. The result was totally unexpected. A very good looking cookie that tasted like peanut butter, BUT it smelled like skunk. Yes, skunk. We dubbed them skunk cookies and… someone did actually eat them all. It is one mistake I will never repeat…Yikes!!!
