Fresh apples work better in cakes than in pies. If you think about it, cakes benefit from having randomly higher moisture than they would without fresh fruit, whereas nobody ever won a ribbon for a weepy pie.

Fresh Apple Cake (as written on card)
Beat for 3 min:
1 1/4 c. oil
3 eggs
2 c. sugar
Add:
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 c. flour
Fold in:
1 c. walnuts
3 c. med. apples (chopped)
Fold into greased tube pan + bake at 325 for 1 hr. + 20 min.
