Oatmeal Refrigerator Cookies
Temp. 400 deg. Time 8-10 minutes. Yield 5 to 8 dozen.
1 1/2 c. flour (plus 2 to 4 Tbsp. if dough is too soft)
1 tsp. baking soda
1 tsp. salt
1 cup soft shortening
1 cup granulated sugar
1 cup light brown sugar
2 eggs
3 Tbsp. molasses or dark corn syrup
1 tsp. vanilla
3 cups quick oats
Sift together first 3 ingredients. Mix shortening with next 5 ingredients.
Mix in flour mixture, then oats. Mold into long rolls and wrap in waxed paper. Chill in refrigerator.
To bake: heat oven to 400 deg. Slice dough thin and place on ungreased cookie sheets. Bake until light brown.
