Hot Sauerkraut

With sugar to bring the vinegar into balance.

This was written on the the back of an otherwise blank sheet from a hotel notepad. Although the streets look to have been renumbered, there’s a Quality Inn driveway on the spot where the Rodeway Inn’s address would have been. The Rodeway chain started in 1962, and eventually ended up as part of the Choice Hotels group in 1990. Quality Is a Choice Hotel brand.

There is a Rodeway Inn about 17 miles to the east, however, on the other side of Indianapolis, just in case you find their notepads irresistible.

Hot Sauerkraut

1 jar sauer [kraut? Kraner?]
1 Tbsp. Mazola oil
1 Tbsp. caraway seed
2 T. brown sugar
1 small c. pimento

Simmer for at least 30 minutes. Stir occasionally.

Serves 6 to 8.

Yesterdish suggestion: Given the proportions, I’d try a 1-1/2 quart jar of sauerkraut, drained and rinsed.
