Homemade Cranberry Bread

Cranberries and pecans in an orange-flavored loaf.

Homemade Cranberry Bread

2 cups flour
1 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1-1/2 tsp. salt
1 cup halved raw cranberries
2 Tbsp. salad oil
1/2 cup chopped pecans
1/2 cup wheat germ
3 Tbsp. grated orange peel
1 egg, slightly beaten
1/2 cup orange juice
1/4 cup warm water

Mix and sift flour, sugar, baking powder, baking soda and salt. Stir in cranberry halves, pecans, wheat germ and orange peel. Combine egg, orange juice, water and oil. Add to flour mixture. Stir just enough to moisten ingredients. Spoon into a greased loaf pan 9 x 5 x 3″. Bake at 350 degrees for 50 to 60 minutes. Cool in pan 5 minutes; remove from pan and finish cooling on rack.
