Angel Peach Roll
2/3 cup sweetened condensed milk
1/4 cup lemon juice
2 tsp. unflavored gelatin
2 Tbsp. cold water
1-1/2 cup chopped fresh peaches
1 c. heavy cream, whipped
2 Tbsp. sugar
1 angel food sheet cake
1/2 cup toasted coconut
Pour milk into bowl; slowly stir in lemon juice until milk thickens.
Soften gelatin in water; set over hot water to dissolve. Stir into milk. Add peaches. Refrigerate until just thick enough to spread.
Add sugar to whipped cream; spread a thin layer on cake. Cover evenly with peach mixture, then roll like a jelly roll. Cover out-side of roll with remaining whipped cream; sprinkle with coconut. Refrigerate. Makes 8 servings.
