Marmalade Cake and White and Gold Icing

Snowdrift was a brand of vegetable shortening.

From a box sold in Canby, Oregon.

Marmalade Cake

Sift together into a large bowl:

  • 2 1/4 cups sifted cake flour
  • 3 tsp. double action baking powder
  • 1 cup sugar
  • 1 cup salt

Add:

  • 1/2 cup snowdrift
  • 3/4 cup milk

Mix until flour is dampened. Beat 2 minutes.

Add:

  • 2 eggs
  • 1 Tbsp. lemon juice
  • 1/2 cup orange marmalade

Beat 1 minute. Pour into 2 greased 8″ layer pans lined with plain paper. Bake in moderate oven, 375 deg. about 25 minutes.

White & Gold Icing:

Cream 2 Tbsp. butter. Add 3 cups sifted confectioners sugar and 1/4 cup lemon juice alternately; beat to spreading consistency. Frost cake, and decorate top with 1/4 cup marmalade.
