Lemon Nut Bread
1/2 cup shortening
2/3 cup sugar
grated peel of 1 large lemon
1 Tbsp. lemon juice
1/4 tsp. lemon extract
2 eggs
2-1/4 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 cup milk
1/2 cup chopped nuts
Glaze:
1/2 cup confectioners sugar
and about 3 Tbsp. lemon juice
Loaf pan–greased. Oven 350 deg. 1 hour or until done.
Pour lemon glaze over hot bread in pan–let stand 20 minutes before putting on cake rack.
