Rice Custard And Baked Apples in Lemon Custard

The apple recipe appeared in ads for margarine in the 1940s–this from the October 9, 1947 edition of the Syracuse Herald-Journal:

Apples Baked in Lemon Custard

 
1/2 cup melted Allsweet
4 small apples
1 egg
1/2 cup milk
1 Tablespoon lemon juice
1 lemon rind, grated

Wash and core apples; place in a small baking dish. Bake in moderate oven (350 deg. F.) 20 minutes. Separate egg. Beat white until stiff and add yolk. Beat well. Add Allsweet. Pour over apples and continue baking until apples are tender (about 10 minutes longer). Serve hot.

Rice Custard

1/3 cup uncooked rice
2-1/4 cup milk
2 eggs, separated
1/2 cup sugar
1 tsp. vanilla

Wash rice; drain and add to the milk in top of double boiler. Cover and cook over boiling water 45 minutes. Remove from heat.
Beat the egg yolks. Add 1/3 cup sugar. Add slowly to the hot rice mixture. Cook over hot water two minutes longer, stirring constantly. Remove from heat.

Add vanilla. Cool. Whip the egg whites stiff and fold into custard.

Baked Apples in Lemon Custard

Wash and core 4 small apples. Peel 1/3 down.

Put in 1-1/2 qt. baking dish. Cover and bake in (350 deg.) oven 45 minutes or until tender.

Beat together:

  • 1 egg
  • 1/3 cup sugar
  • 1/4 cup milk
  • grated rind of 1 lemon
  • 1 Tbsp. lemon juice, and
  • 3 Tbsp. melted margarine

Add any juice from apples and mix well. Pour over apples and bake uncovered ten minutes.
