With whole wheat flour and buttermilk.
From a box sold in Nampa, Idaho.
1/2 cup butter
2/3 cup sugar
3/4 cups rhubarb, chopped
1-1/2 cups all purpose flour
1 cup whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
1 cup chopped nuts]
Preheat oven to 350 deg. In large bowl, cream 1/4 cup butter or magazine with 2/3 cup sugar. Beat in 2 eggs. Add 3/4 cups chopped rhubarb.
In another bowl, mix 1-1/2 cups all purpose flour and 1 cup whole wheat flour with 1 tsp. baking soda and 1/2 tsp. salt.
Add dry ingredients to rhubarb mixture alternately with 1 cup buttermilk. Stir in 1 cup chopped nuts. Place dough in greased 9×5 inch loaf pan and bake 1-1/4 hours until bread tests done.
Makes 1 loaf.
