Rum-Pot Cookies

With brown sugar, raisins, and brandied fruit.

Rum-Pot Cookies

1 cup butter or oleo
2 cups brown sugar
2 eggs
3 cups fruit (well-drained)
4 cups flour
2/3 cup liquid from Rum-Pot
1 tsp soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg

(Optional all or any)
1 cup white raisins
1 cup chopped nuts
1 cup chopped dates

Cream butter and sugar. Add eggs and mix well. Add 1 cup flour to the fruit and set aside. Sift remaining ingredients together and add alternately with liquid. Blend well. Stir in fruit and optional ingredients.

Drop by teaspoon onto a greased cookie sheet and bake 350 deg. 10-15 minutes.

For “brownie-like” cookies pour batter into large shallow pan and spread to about 1/2 inch thick. Increase baking time to 30 minutes.
