Dot’s Company Potatoes
2 lbs. frozen hash brown potatoes, thawed
1 can cream of chicken soup
1/2 cup fresh green onions including tops (diced)
4 oz. sharp cheese, shredded
12 oz. sour cream
Season to taste.
Topping:
1/4 cup butter, softened
1/2 cup Ritz cracker crumbs
Mix together.
Mix first ingredients and put in greased casserole. Add topping.
Bake in 350 deg. oven about 45 minutes or until bubbly.
In Utah and Wyoming, this recipe “Dot’s Company Potatoes” is called “Funeral Potatoes.”
