My Little Favorite Mother’s Cake

Today is one year to the day of when I started posting recipes on Yesterdish. Dori is planning something special for Monday’s recipe–as you probably know, she’s an immensely skilled baker. I’m working on more of “best of” post, too.

But I tend to be reserved when it comes to celebrating, and so my idea of a party is posting a few cake recipes, putting a candle in the logo, and getting back to work of saving recipes.

We’ve mentioned that the F.J. who owned this box was Ferna Mae Jones. If this is her mother, then the little favorite mother in the recipe was Zelma Kafka. She wrote: “Hope you can read this. Just can’t see hardly today.”

Yes, Mrs. Kafka, we can read it. Thank you so much for writing it. I’ll make it for someone I love, just the way you did. And to everyone reading, thanks for being a part of this little thing we do. Now go call your little favorite mother.

[My Little Favorite Mother’s Cake]

1-1/4 cup dates cut up, or 1 large cup
1 cup hot water over dates; put hot water, let cool

In mixing bowl put:
1 cup sugar
1/4 cup Ollie [Oleo?] or Crisco or Spry

1 egg and 1 tsp. vanilla; stir till real fluffy, about 5 minutes
Add dates to other beaten ingredients.

Add lastly:
1 tsp. soda
1/2 cup salt
1/2 cup nuts
1-2/3 cup flour, “Gold Medal” (don’t have to be Gold Medal)

Sift flour, soda, and salt. Add to alternately with date mixture. Begin and end with flour mixture then nuts.

I have ready little square pan greased and floured. This pan is only 8 inches square; would be better larger, but it’s okay.

This frosting is nice, so easy to do.

1 Tablespoon brown sugar
1 Tablespoon flour
1 cup powdered sugar
1/4 cup, scant, Ollie [Oleo?]
1/2 tsp. vanilla
2 Tablespoons half and half

Beat fluffy; heat but not boil.

This easy penuche icing is good but other little frosting is nice and so easy. Is good on the date and banana bread too.

1/2 cup butter or Olley [Oleo?]
1/2 cup brown sugar (packed)
2 Tbsp. half and half milk
about 1 cup confectioners sugar, sifted

Melt butter in pan. Add brown sugar. Boil over low heat 2 minutes, stirring constantly. Stir in milk. Bring to a boil, stirring constantly.

Cool to lukewarm; stir in confectioners sugar. Beat till thick enough to spread.

If it seems a little too thick, add a little hot water, pinch butter.

I like this, not so much to make as it sounds, but I like the other “icing, so easy to do.” And so nice.
