Or spaetzle, as they’re sometimes known.

- 2 cups flour
- 1 tsp. salt
- 2 slightly beaten eggs
- 3/4 cup milk
Beat well. Cut into boiling salted water–hold the bowl over the boiling water–using a knife cut small strips and drop them into the water. They puff up as they cook. Cook a few minutes and drain.
