Yeast

Yeast is a tiny plant invisible to the eye. It requires: food, air, moisture, warmth for growth. The sugar is the food of the plant. We furnish the moisture in our liquid and we keepit warm so that it will grow in our bread.

In growing, the yeast changes the sugar to alcohol and gas. The gas makes our bread light. The alcohol and extra gas are driven off in the baking.

Our bread should be a golden brown with a sweet odor and the wholesome taste of wheat. The test for sufficient baking is the time required to bake as if it sounds hollow when tapped it is done.
