Cherry Upside Down Cake

Ordinarily, cherry mix refers to the syrup in which maraschino cherries are packed. In this case, however, I’d guess it means the recipe for Frozen Cherry Mix from the same binder.

That said, I’d consider using this Cherry Pineapple Sauce instead, since it makes smaller quantities with less work.

Cherry Upside Down Cake

1 Tbsp. butter
1 cup cherry mix
1-1/4 cup sifted flour
3/4 cup sugar
1-1/2 tsp. baking powder
1/4 tsp. salt
2/3 cup heavy cream
2 Tbsp. milk
1/2 tsp. vanilla
1 egg

Melt butter in an 8x8x2″ pan. Spread cherry mix evenly in bottom of pan. Sift dry ingredients together into mixing bowl. Add remaining ingredients. Mix to dampen the dry ingredients. Beat 2 minutes at medium speed of mixer. Pour batter over the mix and spread evenly. Bake at 350 degrees about 45 minutes. Remove from oven and let stand 5 minutes. Invert pan over cake plate, let stand one minute then remove pan. Makes 9 servings.
