Have you ever had a taco salad and thought, “What this needs is Jell-o?”
From the box of S.J. from Portland, Oregon.
Molded Vegie Salad
1 (6 oz.) pkg. lemon Jell-o
1 (6 oz.) pkg. lime Jell-o
7 cups water
1 to 2 Tbsp. taco sauce
2 to 3 tsp. lemon juice
2 drops Tabasco sauce
1 tsp. salt
1 finely chopped green pepper
1 thinly sliced bunch radishes
1 cup thinly sliced celery
1 cup grated carrot
Dissolve Jell-o in boiling water, using 3 to 4 cups of total allowance. Stir in balance of water, using cold (or combination of cold water and ice cubes). Stir in seasonings; add veggies and pour into large baking dish or molds.
This recipe will fill a 9×13″ pan and will serve 12 to 15.
