Baked Fish with Stuffing

Bacon, butter, Battlestar Glactica. Except not the last one.

How long you actually bake the fish, and at what temperature, depends a great deal on what fish you’re dealing with. But assume for a fish that’s at or just under three pounds before stuffing, an hour in the oven at 325 degrees would work.

Baked Fish with Stuffing

Method:

Clean a large fish. Sprinkle with salt inside and out. Stuff and sew. Place in a greased dripping pan. Sprinkle again with salt and pepper.

Dredge with flour and place around and on top of fish small pieces of fat, bacon, or butter, salt pork.

Bake one hour in a hot oven, basting every ten minutes. Serve with drawn butter, egg, or Hollandaise sauce. Ex.
